I know I have been off the radar the past week and I apologize. This past week I started my final internship in Kindergarten, have been sick as a dog, turned 21, and have been lesson planning like crazy. I have some exciting posts coming up in the next couple of weeks so definitely stay tuned!
This recipe is not only delicious but it is also healthy! It is great for those participating in the 21 Day Fix or even for those just wanting a healthy lunch or dinner option. This is Barrett and I’s go to lunch and dinner! It’s easy, inexpensive, and yummy!
Franks original hot sauce.
Mild shredded cheese.
Boneless skinless chicken
Preheat oven to 375 degrees.
Place boneless skinless chicken on pan.
Douse chicken in hot sauce.
Cook for 15 minutes.
Take chicken out and pour shredded cheese all over.
Place back in oven for 5 minutes or until cheese is completely melted.
Let chicken set for 15 minutes before serving.
I am thankful for my health insurance. I know this one may sound a bit silly, but it is truly a blessing to be able to go to the doctor whenever I need to. Today I was at the eye doctor for a maintenance visit and I was thinking about all the people who can’t afford to go to the eye doctor to get glasses, who can’t go to the dentist for cavities, and who can’t go to the doctor for a cold. I am definitely lucky I am able to do all of those things.
Lately I have been finding myself needing a bit of inspiration. I feel that I need to focus on myself and my relationships a bit more, so I started reading The Five Love Languages by Gary Chapman.
This week Barrett and I have really honed in on our fitness and nutrition. The holidays have really gotten us off track but we are ready to conquer! We started our superfood shakes again and have begun P90X3.
This weekend I have been binging on Greys Anatomy and I am totally not ashamed of it. It’s only the second time I’ve ever binge watched it!
Down here in sunny old Florida we are finally getting some cool air and I am greatful for that because it was getting way too muggy. I have had my windows open all weekend and I am loving it! My animals love it too. How do I know? Every time I turn around their heads are smashed against the screen sniffing the air.

Starting a new healthy lifestyle for the New Year? Well then you will definitely enjoy this salt free fajita seasoning. Salt is something I really try to avoid as much as possible, but it’s hard with all of the pre-packaged seasonings and processed foods.
This recipe not only makes delicious fajitas and tacos (Yes I use it for ground beef also and it’s awesome!) but it is also super easy to make and extremely cost effective. I just use an old spice container to store the seasoning or you can store it in a tupperware.
1 TBS Chili Powder
1 TSP Cumin
1/4 TSP Cayenne Pepper
1/4 TSP Garlic Powder
1 TSP Black Pepper
1. Mix together in a bowl
2. Store in a sealed container
